Ginger Beef Stir-fry with Tatsoi and Jasmine Rice

 

Ingredients:

1 cup jasmine rice

1 head tatsoi, chopped

3 scallions, chopped

2 garlic cloves, minced

1 bunch thai basil, chopped

1 small piece ginger

10 oz top round steak, thinly sliced

2 tbsp soy sauce

1/4 cup hoisin sauce

 

Instructions

Cook the rice per instructions. In a large skillet, heat some oil and add sliced beef on high. Cook until browned, 2-3 minutes. Transfer the beef to a plate, keeping the juices in the pan. Add a little more oil to the pan with the garlic and ginger. Cook for about 30 seconds, until fragrant. Add tatsoi, soy sauce, half the hoisin sauce, and half the scallions. Cook 3 minutes until the vegetables are soft and coated in the sauce. Add beef back and cook until heated and coated in the sauce. Remove from heat. Serve with rice and top with extra hoisin and scallions. Garnish with basil.
