Sheet Pan Roasted Mediterranean Vegetables
12 cherry tomatoes, halved
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 green bell pepper, chopped
2 zucchini, sliced
2 red onions, quartered
2 cloves garlic, crushed and peeled
2 tbsp olive oil
1 tsp chopped basil
salt and pepper to taste
Preheat oven to 350F. Place tomatoes, peppers, zucchini, onions and garlic on a large, rimmed baking sheet. Drizzle and toss with olive oil. Season with basil and pepper. Bake until vegetables are lightly browned and easily pierced with a fork, 35-40 minutes.
