Shishito Pepper and Cucumber Salad

Serves 4
For Salad:
12 oz shishito peppers
2 tsp olive oil
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 english cucumber, thinly sliced
1 cup cherry tomatoes, halved
1/4 cup chopped cilantro
2 tsp black sesame seeds
For vinaigrette:
2 tbsp lemon juice
1 tbsp rice wine vinegar
2 tbsp olive oil
1/2 tsp kosher salt
1/4 tsp black pepper
Instructions:
Preheat gas or charcoal grill on high heat. Toss the shishito peppers in olive oil, salt and pepper. Grill them on both sides until they are blistered, about 1 minute per side. In a large bowl, combine the peppers with cucumbers, tomatoes and cilantro. Whisk together vinaigrette ingredients and drizzle over the salad.
