Description
Spring Onion Salsa
Ingredients:
1 cup tomatoes, chopped
4 scallions, finely diced
1 small red onion, chopped
1/2 cup fresh coriander, basil, mint or parsley, chopped
1/4 tsp salt and pepper
2 tbsp lime juice
optional: 1 chopped avocado, lebanese cucumber, and/or feta cubes
Instructions:
In a medium bowl, stir together all the ingredients to combine. Chill for at least 1 hour. Serve on toasted sourdough, with chips, or as a side to our favorite curry.
