Salad of mixed greens and herbs
Prep time: 20 minutes
Serves 4
Ingredients:
8 scallions, finely chopped
2 cups arugula
2 cups frisee or radicchio, chopped
1 cup mustard greens, chopped
small handful baby bok choy leaves
small handful of basil, mint, cilantro, or parlsey
pinch sea salt
3-4 tbsp hazelnut oil
1 tbsp white wine vinegar
1/2 cup toasted hazelnuts, coarsely chopped
Instructions:
Put the greens and herbs in a large bowl, toss gently. Drizzle oil and vinegar and toss gently again. Sprinkle hazelnuts on top and serve.
