Chilled Borscht
Ingredients:
greens from 4 fresh beets
2 cups cooked, diced beets
1/2 cucumber, peeled, seeded and diced
4 thinly sliced radish
1 tbsp scallions, thinly sliced
3/4 cup tomato juice
1 1/2 cup water
3 tbsp red wine vinegar
salt and pepper to taste
1/2 tsp dill weed
3/4 cup sour cream
Instructions:
Wash and stem beet greens. Steam in a small amount of water until tender. squeeze dry in a kitchen towel and chop. Combine cooked beet greens in a bowl with diced beets, cucumber, radish and scallions. Add tomato juice, water, vinegar, salt, pepper and dill weed. Serve cold with a dollop of sour cream.
